Easy Rice Cooker Hot Pot Meal

Ingredients

for 4 servings

  • 2 cups short-grain white rice, rinsed
  • 1 (3- to 4-ounce) packet of hot pot soup base sauce of choice (spicy or mild), or to taste
  • 1 lb mixed hot pot ingredients (such as raw sliced beef/pork, raw shellfish, and frozen/raw vegetables)
  • 1 small, thin (about 5 ounce) whole, unpeeled sweet potato (optional)
  • 2 cups water, or as instructed per rice cooker model
  • 2 tablespoons light sweet soy sauce, or to taste (optional)

Preparation

  1. Place the rice in the bowl of a rice cooker. Top with the hot pot sauce to taste. (If you’re using a spicy hot pot sauce, you might want to use just half of the packet. It can get very spicy.)
  2. Arrange the mixed hot pot ingredients in a single layer on top of the sauce and rice. Do not overcrowd the pot; you should be able to see some of the rice underneath the mixture. If needed, remove some of the hot pot ingredients.
  3. If using the sweet potato, place it on the center of the hot pot ingredients. Pour the water into the rice cooker bowl as instructed by your rice cooker. If using the soy sauce, add it to taste.
  4. Cover the rice cooker, and select the “Mixed” setting. Once the cycle is complete, uncover the cooker. Remove the sweet potato. (If the sweet potato is not cooked through or soft enough, place it in a microwaveable container. Cover it, and microwave on HIGH for 1–2 minutes, until the middle is soft enough for a fork to easily pierce.) Cut the sweet potato into slices, and set aside.
  5. Using a rice paddle, stir together the mixture in the rice cooker. Transfer to serving bowls, and top with the sliced sweet potato.
