Ingredients for 4 people

2 tablespoons olive oil
1 small onion or shallot, chopped
500g mushrooms, cleaned and sliced
150g smoked ham (or bacon), diced
2 tablespoons butter
2 tablespoons flour
360ml lukewarm milk (whole or semi-skimmed)
50g cheese (Emmentaler, Comté, Gruyère, or Parmesan)
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper
Pinch of nutmeg (optional)
